  • 1.5 kg turkey

For satsivi sauce:

  • 200 g walnuts
  • 600 g chicken stock
  • 7 g seasoning uchi-sunel
  • 3 g coriander
  • 1 g dry chili pepper
  • 5 g garlic
  • 8 g of salt
  • 10 g onions

  • Mix walnut, garlic, onion and broth and beat in a blender. Bring to taste with spices. The sauce is ready.
  • Rinse the turkey under cold water, remove the remaining entrails. Boil until half burned with the addition of onions, garlic and bay leaf.
  • Take the bird out of the water, salt it. Bake in the oven at 180 ° C for 20 minutes. Cool the turkey. Remove the skin. Separate the meat from the bones and divide into large fibers.
  • For one serving of 150 g of finished bird, pour 200 g of Satsivi sauce. Garnish with cilantro sprigs and dry chili peppers.
